Gluten & Dairy Free Spicy Thai Peanut Chicken!

I LOVE Thai food!
It's (for the most part) simple, and much of it is - or can be made to be- gluten free!
So, try this delicious, gluten & dairy free Spicy Thai Peanut Chicken!
I suggest serving it over rice or with a nice side salad.

Spicy Thai Peanut Chicken
4 tbsp. crunchy peanut butter
1 tbsp. sesame oil
1/2 cup corn syrup, lite
2 tbsp. pure honey
2 tbsp. Kikkoman Gluten Free soy sauce
1/4 cup ketchup
2 tbsp. minced garlic
2 green onions, minced (use a slice or two of red onion if you don't have any green onions)
1/4 cup lite coconut milk
1 tsp. chili powder
1 tsp. cayenne (can use less cayenne if you want to)

4 chicken breasts, diced
1 tbsp. canola or olive oil

In a medium bowl, combine all ingredients except chicken. If mixture is too chunky, add 2 tbsp. water.
Heat oil in medium sized skillet or pan under medium heat. Once oil is heated, place chicken in and brown on all sides. Pour peanut mixture over chicken and cover, simmering for 30 minutes or until chicken is cooked through.
