Does anyone else remember when there was supposed to be a bacon shortage this year? Is that still a thing? Anyways, I don't usually eat red meat but, let's face it, pork truly is the "other white meat" so generally I can handle it pretty well. However, it's pretty greasy so portioning is <i>key</i> when eating bacon. This recipe incorporates that portioning, but also allows you to truly enjoy the incredible taste that we all love... bacon! With protein-heavy meals, I like to have a side dish of a small salad or veggies/fruit! Gluten and dairy free as always. </div>

2 boneless, skinless chicken breasts</div>

8 bacon strips</div>

1/2 cup red wine</div>
<div style="text-align: left;">
2 tsp Becel Vegan margarine, melted </div>
<div style="text-align: left;">
1/4 cup ketchup</div>
<div style="text-align: left;">
1/8 tsp hot sauce</div>
<div style="text-align: left;">
1/4 cup medium salsa</div>
<div style="text-align: left;">
1/8 tsp Chinese 5 Spice Powder</div>
<div style="text-align: left;">
1 tbsp garlic powder</div>
<div style="text-align: left;">
1/2 tbsp onion powder</div>
<div style="text-align: left;">
1 tsp rosemary</div>
<div style="text-align: left;">
1/4 tsp paprika</div>

Wrap each chicken breast with 4 strips of bacon. If needed, keep bacon strips in place with toothpicks. Spray frying pan with cooking spray or use olive oil and turn heat to medium. Place wrapped chicken breasts in oil and cook, turning often. Remember to watch out for bacon spits!</div>

In medium-sized bowl, combine the remaining ingredients thoroughly. After the chicken has cooked for 7-8 minutes, pour in red wine mixture, reduce heat to simmer and cover. </div>

Chicken should simmer for about 20-25 minutes or until cooked through. Be sure to turn chicken every so often to ensure that the bacon gets cooked evenly.</div>

Once chicken is cooked through, serve and use spoon to evenly coat remaining wine mixture over chicken. Enjoy!!</div>

Here's a quick-fix for beginners from beginners: If you can, buy a
Day-Hiker backpack (specifically) - Atmosphere, MEC, and other outdoor
stores will have them marked. They may have male/female varieties for
weight displacement, but the big difference between a day-pack and a
backpack one might use for school is the rigid back. If you don't have
time or funds to acquire a day-hiker pack, a quick-fix (keep in mind
this won't work for long-term) is to take a cutting board and place it
against the back of your pack. This will mimic the rigid back of a
day-hiker pack, and will save your back </div>

don't usually do "selfies", but I'd like to share this one! When I got
engaged last August, I was at my very heaviest. I was dealing with an
un-diagnosed gluten and dairy allergy and, although I was happy in all
other areas of my life, I really wasn't feeling good about myself. So, I
decided to make a change. I began exploring the gluten and dairy free
diet (and blogging about it!) portioning, and tracking and
maintaining regular exercise. Since then I have lost 40 lbs to date with
a goal of losing 20-25 more pounds. The feeling is incredible; I feel
so much better, more energetic, and more willing to do things I never
would have before. My wedding dress even needs to be taken in! All
thanks to my diet, exercise, and determination! I can't wait to continue
down this healthy road and, through my blog and other activities, help
others to get healthy and love themselves for the amazing human beings
they are!! I know I will reach my goal soon!</span></span></div>

When facing a situation with a difficult person, we must remember that people's behaviour is, more often that not, about them... and <i>not</i> about ourselves. We have to learn not to take it personally; when we do take it personally, we involve ourselves in their behaviour and that is when conflict arises.</div>
<div style="text-align: center;">
I am learning <i>very</i> slowly to not take others' negative attitudes or behavours personally... especially working in a customer-oriented position, I am learning to not take things like this to heart, especially when I know that I have done my job to the best of my ability and always maintained that I want to put them first. </div>
<div style="text-align: center;">
Such as an incident that happened today: we had to call a gentleman and cancel an appointment due to an incident that had taken place on a job site. The timing and the incident, of course, is out of our control; when I worked in catering, we called such things an "Forces of God" that the owner needs to attend to to ensure that his or her employees and clientele are safe.</div>
<div style="text-align: center;">
Anyways, this gentleman saw this as an inconvenience to him. He had left work early on a Friday to meet for this cancellation. Now, I get it; people are busy! People have work and, when they take time off, they lose money and that is certainly upsetting. This gentleman also stated that it would be better for him if I had called at 1pm, instead of calling immediately after the incident was reported at 2:45pm. He then proceeded to tell me that he was "busy like anybody else" and his "time was too valuable to waste" and hung up on me. All the while, I did my job; maintaining that I wanted to find a solution for him, apologetic, but also assuming an air of compassion in hopes that he would return the same to me during an unfortunate, surprise incident.</div>

People put so much <i>value</i> on their time, how stressed they are, and (especially, but of course not limited to) their jobs without realizing that I am also making a livelihood- I am also working and my main source of income and happiness comes from providing the absolute best service that I can give to my clients. The last thing that I would like to happen is to be unhappy in my position; and that can (may also stem from other things - I love my job, by the way! :) ) happen when the company's clients are unhappy. I am the first point of contact, and I do my best to ensure the proper service is met and that I achieve my goal of making whomever I am speaking with satisfied.</div>

Granted, not all customer service individuals are in this attitude... but I would be surprised if not one worker at a company was not committed to providing the best client experience that they can and doing their job <i>right</i>.</div>

We must learn to focus on the positive, and <i>not </i>the negative. If you have not worked as that exact position, then do not assume an arrogant position; you should know that jobs are not easy! Whether you be a stay at home mom or dad, a high-ranking oil executive, a cashier, or even a doctor, you know that having a job is not easy and that you are doing your job to your best ability. Do not place so much value on your time or your day as to think yourself higher than anyone else - if you are not enjoying yourself, do say so, but do not insult the integrity of the worker you are speaking with. It is a finite balance, like everything else in this life, that we live, speak and breathe compassion, understanding and patience. This takes <i>practice!</i> But it must always take precedence.</div>

This is how we breed conflict resolution; a good thing. I am taking this into my life and practicing to do it to the best of my ability. Once you have successful conflict resolution, you become less afraid of conflict- you don't give it <i>value</i>.</div>

My suggestion for this gentleman, if I had been so bold, would be the same logic I try to apply to a traffic jam: you're in a comfortable place with things to do. Yes, it may be a stressful situation, but in the time that you worry, swear, and brew over it, you could have caused your blood pressure to lower; dancing to music, singing to music, talking to yourself (figuring out what the entire list of numbers in the pi equation is, for example). It is all what you make of it, so let's commit ourselves to giving more value to compassion and genuine enjoyment instead of stress and <b>time</b>.</div>

I try to consistently remind myself just how good I have it. It's hard sometimes; studying for exams, trying to maintain my diet and lose weight, working on my relationship, complaining about food that I love but can no longer eat... but jeez we have it <i>good</i>! Let's remember this and be thankful that we are fortunate enough to combat allergies, illness, and hunger and let alone know these luxuries!</div>

With that in mind, here is a recipe for a delicious dish that I thought that I would never eat again: a chicken/egg salad sandwich. Now, everyone makes this different, but that's what I love most about them; no two are the same! This is the <i>perfect</i> brown-bag lunch item and I often get as nostalgic eating a chicken or egg salad sandwich as I do eating Sloppy Joe's (that recipe, my friends, to come later this week - stay posted!).</div>

dash of Frank's Red Hot sauce</div>

2 tbsp medium salsa </div>

1 1/2 tbsp garlic powder</div>

1 tsp black & white pepper mix</div>

1 tbsp onion powder</div>

2 tsp paprika</div>

1 tsp chili powder </div>

Kinnickinnick gluten and dairy free bread, toasted lightly</div>

Heat medium-sized frying pan over medium heat. Add oil and chicken breasts and cook until chicken breasts are cooked through. While chicken is cooking, boil water and hard-boil eggs.</div>
<div style="text-align: left;">
Once chicken is cooked, remove from pan and place on flat surface for shredding. Using two forks, shred chicken breasts and set aside.</div>
<div style="text-align: left;">
Once eggs are hard-boiled, remove yolks and thinly slice egg whites. Set aside.</div>
<div style="text-align: left;">
In large mixing bowl, pour in coleslaw mix. Add vegetables, chicken, and eggs and mix thoroughly. In smaller bowl, combine mayo, lime juice, hot sauce, salsa and spices and mix thoroughly. </div>

Combine mayo mixture with coleslaw mixture and use salad forks to toss generously, until mayo mixture has thoroughly, and evenly, coated all of coleslaw mixture.</div>

Toast bread and spread chicken salad on top. Sandwich between two pieces and eat!</div>

Woody
is obsessed with what we have lovingly dubbed as ‘tummy time’. He will
lay right beside you on his back, spread eagle, and demand you rub the
round bit of his tummy (with your arm in-between his back legs – strange
I know but he loves it). He is a tabby-minx cross, so he doesn't have a tail. He also loves the smell of residual chlorine
water from our hot tub, the smell of sweaty hot yoga clothes, and loves

In medium-sized freezer bag (or extra Shake n Bake bag) combine ingredients from lemon juice to cayenne powder. Once mixture is thoroughly combined, place chicken breasts in bag. Twist-tie or seal bag tightly, and place in frig for a minimum of one hour to a maximum of two hours.</div>
<div style="text-align: left;">
(I <i>hate</i> waiting for dinner, so I would do this right when I get home and slice up some fruit and veggies to tide us over... that way, we're munching on healthy snacks, we're not complaining about being <i>starving</i>, and I don't have to prepare a side dish!)</div>
<div style="text-align: left;">
When your 'marinading' time has passed, preheat oven to 425F. Spray cooking oil or rub olive oil in oven-safe pan (I use, and will continue to use, a Corningware casserole dish). Place chicken breasts in dish and pour 'marinade' mixture over chicken breasts. Cut lemon and combine brown sugar, honey, and water. Rub brown sugar mixture on each side of breast, and place lemon slices evenly over top of chicken breasts.</div>

Place dish in oven and cook for 30 minutes or until chicken is cooked through. Serve with a sprinkle of rosemary over each chicken breast. </div>

In small bowl, combine ingredients from salsa to bread crumbs. Add more corn chips/flakes or bread crumbs if need be. Butterfly chicken and spread salsa mixture on half of butterflied breast. Roll breast up and secure with toothpick.</div>

Heat olive oil on medium in stove top pan. Place chicken breasts in oil, turning frequently. Chicken should be golden-brown colour all over when done.</div>

Cut each breast into two if you want leftovers for lunches (remember you may need more toothpicks to keep the halves of chicken breast together).</div>

This is not just a turkey burger. This is a messy, delicious, completely gluten and dairy free and seriously yummy. Word of warning, though, this is not a recipe for when you want a quick meal as the prep time is a bit extensive, but man... is it worth it!</div>

I think I may have posted about this story before, but when I was in Paris a few years ago, we walked into this little hole in the wall eatery in Montmartre, where our hotel was. It was late, and we were in need of food, so we stopped in. This was before I knew 100% I was gluten and dairy free, but wow- they served a mean, messy, marvelous <i>croque monsieur</i>- <i>c'etais magnifique!</i> </div>

In large bowl, mix together first 11 ingredients until thoroughly combined. Add more bread crumbs if need be. Roll turkey mixture into patties and place ever on well-oiled barbecue or stove top pan. As patties start to cook, start on the potatoes.</div>

Grate potatoes and carrots- use the large "hole" in the grater (can anybody think of a better way to say that?). Combine grated carrots and potatoes and take a handful and place on well-oiled stove top pan on medium heat to create hashbrown 'patty'. After 3-5 minutes, use a spatula to look at the underside of hashbrown 'patty' to confirm that it is a golden-brown colour. If so, flip hashbrown 'patty' over and sprinkle minced garlic over each hashbrown patty. Use spatula to check underside of hashbrown patty again after another 3-5 minutes.</div>

Slather bun with vegan margarine, mayonnaise, or whatever you like on your burgers and place turkey patty on top. Place hashbrown patty on top of burger and top with toppings of your choice (a fried egg would be amazing on top!).</div>

The mountains are memorable - anybody from Alberta can attest to that! Personally, when I drive to Banff from Calgary, looking at the mountains creates a bit of a stir within me. How is it that these beautiful pieces of Earth were made? I will always cherish the sight of them... much like good people with the best intentions are cherished by those around them. You will then learn to cherish yourself. Remember my post about having a constant heart? <br />
You cannot cherish a bad person - somebody who constantly cuts you down, insults you - I'm not talking about somebody who has a bad day - this is somebody who consistently, <i>intentionally</i> leaves a bad impression.<br />
Think of these intentionally bad people as The Buddha says - as an arrow shot in the dark. The arrow's intention is to wound, to kill... but if it is shot in the dark, it misses you and you do not see it, you do not cherish it, it does not leave an impression on you, and you are not affected.<br />

Thanks to my former love of pop and my forever love of Crystal Light, I can't really drink just plain old water anymore... I know, I know - terrible!</div>

But, instead of pumping myself full of aspartame, I've recently been drinking water infused with real fruit and herbs! It's got many benefits; the vitamins from the fruit, it tastes great, it offers a bit of a natural 'filter', and it also prevents you from downing the water- especially during a workout! While staying hydrated is key during the day, you <i>cannot</i> down glass after glass of water! You have to pace yourself or else your stomach will protest very obviously and you'll throw up - making yourself even more dehydrated. Oh, and you'll feel better... trust me.</div>

Heat small saucepan over medium heat. Pour in 1 cup of Hemp Bliss milk and margarine, stirring until margarine is melted. Mixture will start to become thick. Add in cheese and continue stirring. Add coating mix, olive oil, and spices and keep stirring. Add the rest of the Hemp Bliss milk and stir, reducing heat to simmer.</div>

Start pasta now, cooking as per instructions on pasta packet. Start cooking turkey sausage now as well.</div>

Oh, how I love simple, quick, and easy meals! Especially with my fast-paced life; quick, easy, and homemade meals are hard to come by. <i>However,</i> below is a meal that embodies all of those desirable qualities and its gluten, dairy and seafood free!</div>

2 chicken or turkey breasts, cut in half</div>

1 tbsp. ground black pepper</div>

2 tsp. sea salt (you can use table salt if you'd like, too)</div>

1 tsp olive oil</div>

Heat oil in nonstick stovetop pan over medium heat. Combine flour, pepper, and salt on flat or flat surface for coating. Coating pieces of chicken/turkey breasts in flour mixture and set in pan. Monitor the meat and flip when needed. Chicken should be a golden/brown colour and cooked through before you serve it!</div>

The Meow Foundation holds a very dear spot in both Thomas and my hearts since we adopted our littlest kitty, Bella, from them. Bella has brought so much light and love to our lives and we are better people because of her. She is the most cuddly, beautiful little ray of sunshine and, for humans like ourselves who will not be having children, animals like the ones that we have been so fortunate to bring into our lives are our children forever.<br />
There are many tragedies in the world that people can get behind and I support that fully. However, we must also remember how to be compassionate to the animals that be often take for granted. They become part of our families and capture our hearts, yet there are so many animals out there that are subjected to terrible, unjustified cruelty; abandonment, abuse, etc. when all they have to offer us is <i>unconditional</i> love. I wonder what the world would be like if we adopted the same compassion that our animals carry for us and had that for all living things.<br />
Don't let this cruelty happen; do something about it! Whether that means donating, volunteering, fundraising, or becoming directly involved with any cause that strikes you- the more we build compassion, the brighter future we build for ALL living things on this fragile, precious Earth.<br />
